Cataplana is a traditional dish from the southern Portuguese region—right where we are, and a true delight for cataplana lovers!

Its origins are closely tied to the Arab presence in the Algarve many centuries ago. Could it be inspired by the Moroccan tagine? Quite possibly.

The dish is prepared in a unique copper pan with two hinged, clam-like shells that are clamped tightly together during cooking. Typical ingredients include a base of red pepper sauce, tomatoes, chorizo, olive oil, onions, garlic, and sometimes red or green bell peppers, though recipes vary widely. Meat can also be used, and countless variations exist. Copper conducts heat exceptionally well, making it perfect for slow cooking over low heat, while keeping the use of added fats to a minimum—healthy for the heart and ideal for creative cooking.
